Infrared Dough Temperature Control in Industrial Mixers

Stable yeast activity through non-contact temperature monitoring and automated process control

Challenge

Industrial dough mixing is highly temperature sensitive because yeast activity depends on a narrow process window. Friction, mixing time, raw material temperature, and ambient conditions can quickly shift dough temperature outside the target range. Reliable control is further complicated because metallic mixing tools enter the sensor’s field of view and can distort infrared readings if not filtered correctly.

Solution

The Optris CS LT infrared pyrometer is mounted above the mixing bowl for continuous non-contact dough temperature measurement. Operating at 8 to 14 µm, it is well suited to organic materials with high emissivity such as dough. Its fast response time, optional close-focus optics, and integrated signal processing suppress interference from mixing tools and provide stable temperature data for automated machine control.

Benefits

  • -Continuous non-contact monitoring of dough temperature during the entire mixing process
  • Stable yeast activity through reliable control within the optimal temperature window
  • Fast detection of temperature deviations before product quality is affected
  • Lower dependence on operator experience and manual process adjustments
  • Easy integration into OEM machinery via digital or scalable analog outputs

Why Dough Temperature Is Critical in Industrial Mixing Processes

Industrial dough production in bakeries and at manufacturers of dough processing machinery is a sensitive process in which temperature plays a decisive role. Dough mainly consists of water, flour, and yeast. During the mixing and homogenization process, the yeast becomes active, metabolizes sugars, and releases gases that later determine volume, texture, and softness of baked products. This biological activity is strongly temperature dependent and typically takes place in a range between approximately 15 °C and 25 °C, with short-term temperatures of up to 30 °C occurring in certain process phases.

In industrial dough mixers, all ingredients are fed into a container and mechanically mixed. Friction, mixing intensity, and residence time generate heat, which directly affects dough temperature. At the same time, external factors such as ambient temperature, humidity, and raw material temperature influence the process. Without targeted monitoring, temperature deviations can easily occur. If the dough temperature is too low, yeast activity is reduced, resulting in insufficient volume and inadequate softness. If the dough overheats, yeast cells are destroyed, leading to product failure and scrap.

Traditionally, many bakeries rely on operator experience and manual intervention to control the mixing process. Especially under changing environmental conditions, this approach requires skilled personnel to continuously monitor and adjust the process. In a cost-sensitive and highly competitive market, this method is increasingly inefficient. The motivation for automated temperature monitoring is therefore to stabilize product quality, reduce waste, and lower labor costs.

A specific challenge arises from the fact that not only the dough but also the mixer itself enters the sensor’s field of view during operation. Metallic mixing tools exhibit different thermal properties than dough and can distort temperature readings. Reliable infrared temperature measurement must therefore selectively detect the dough surface temperature while suppressing interference from machine components. This is where non-contact infrared temperature measurement using a suitable infrared pyrometer becomes essential.

Technical Sensor Integration for Automated Dough Temperature Control

The technical solution is based on the use of the Optris CS LT infrared pyrometer, which is directly integrated into the dough processing machine. The sensor is mounted above the mixing bowl and continuously measures the surface temperature of the freshly mixed dough without contact. This non-invasive infrared temperature measurement ensures hygienic operation, eliminates mechanical wear, and enables full process automation. Typical measurement distances range from approximately 150 mm to 500 mm, depending on machine size and filling level, and are reliably covered by the sensor’s optical design.

The CS LT operates in the spectral range of 8 to 14 µm, which is particularly suitable for organic, non-metallic materials. Dough exhibits a high and stable emissivity within this wavelength range, allowing the infrared thermometer to deliver precise and repeatable temperature readings with a typical emissivity setting of around 0.95. The sensor’s temperature range is software scalable from –50 °C to 1030 °C, ensuring that it operates well within its specifications and provides long-term measurement stability.

With an optical resolution of 15:1, the CS LT reliably captures the dough surface even at varying distances. An optional close-focus lens allows very small spot sizes at short distances, which is beneficial for compact mixers or applications with strongly fluctuating fill levels. The fast response time of just 14 ms ensures that dynamic temperature changes during the mixing process are detected accurately.

A key feature of the CS LT is its integrated digital signal processing. Functions such as averaging, peak hold, and valley hold allow short-term disturbances caused by moving mixing tools or reflective machine parts to be effectively suppressed. As a result, the infrared pyrometer continuously delivers stable and representative dough temperature values to the control system. All parameters can be easily configured using the CompactConnect software or the IRmobile app.

Communication with the machine control system is performed digitally or, alternatively, via freely scalable analog outputs. Direct digital integration eliminates the need for additional analog-to-digital conversion hardware, reducing system complexity and cost. With its IP65 protection rating, suitability for ambient temperatures up to 80 °C, and resistance to moisture, vibration, and cleaning processes, the CS LT infrared sensor fully meets the requirements of modern industrial food processing machinery.

Infrared Temperature Measurement for Reproducible Dough Quality

The use of the Optris CS LT leads to stable and reproducible temperature control throughout the dough processing stage. Continuous infrared temperature measurement keeps the dough reliably within the optimal temperature window for yeast activity. Deviations are detected at an early stage and automatically compensated before quality losses occur. The result is consistent product characteristics, reduced scrap rates, and significantly improved process reliability.

A major benefit for the user is the high level of automation. The machine operates independently of operator experience and remains stable even under changing ambient conditions. Temperature-dependent adjustments of mixing intensity are performed automatically based on the readings from the infrared pyrometer. This reduces the need for skilled labor and delivers clear economic advantages, particularly in labor-intensive and cost-sensitive bakery operations.

The unique selling points of the Optris solution result from the combination of measurement accuracy, robustness, and ease of integration. The CS LT achieves a system accuracy of ±1.5 % or ±1.5 °C along with excellent repeatability, which is essential for closed-loop process control. Low thermal drift and minimal noise ensure stable temperature readings even when ambient conditions fluctuate.

Compared to an IR camera or thermal imaging solution, the CS LT offers a significantly more cost-effective approach for serial production machines. While a thermal camera or thermal imager can provide additional information on temperature distribution, reliable process control in daily production typically requires only a precise point measurement. This makes the CS LT infrared thermometer the preferred choice for OEMs manufacturing high volumes of industrial dough mixers.

In this application, Optris positions itself not merely as a sensor supplier but as a long-term technology partner. In addition to robust hardware, the company provides extensive expertise in infrared temperature measurement, application consulting, and system integration. High product quality, industrial-grade design, and decades of experience in pyrometers and infrared sensor technology make Optris the preferred partner for bakeries and machine manufacturers aiming to automate and secure their production processes sustainably.
